What do I do while traveling? Look for fabulous recipes to bring back of course. While staying warm for a month last winter in Mexico I met up with Enrique Chavelas, a chef and owner of Cookin’ Vallarta  which conducts local food tours and cooking classes. I spent a day with him making our own tortillas, salsas, and my favorite dish - Pibil.

On Better Connecticut I made Enrique’s Chicken Pibil. A luscious saucy slow-cooked chicken in an aromatic sauce. It’s simple and perfect for making ahead for a crowd. All ingredients can be found at Shoprite in West Hartford.
